Uses of Balck Rice:
As a Pilaf: Steamed and plain and served with a stir fry dish or a curry!
Recipe of Black Rice:
1 cup black Chinese rice
3 tablespoons butter or ghee or oil
1 medium yellow onion, diced fine
2 cloves garlic, minced or 1 whole red dry chili or 1/2 small green pepper
minced (optional)
Water to cover plus 1 inch of water
1 tablespoon toasted sesame oil
Saute the onion in the butter till clear; add the garlic, Add rice, water
and bring to a boil. Reduce to a simmer, cover the pot tightly and cook for approximately 30 to 45 minutes or till the rice is soft but firm.
Add more liquid if rice dries out during cooking. Fluff rice when done and add sesame oil.
Enjoy with a curry, sweet and sour dish of stir fry.
Suggested Use:
When cooked, Black Chinese Rice has a beautiful shiny, Indigo color. Use Black Rice alone or mix with White Rice for color and texture in stuffings, desserts, rice molds pudding and Rice Balls.
Black Rice: Directions for cooking:
1. If you don't want the color of the rice to bleed into your other foods, then rinse rice until the water runs clear.
2. Then mix 2 parts water with 1 part rice.
3. Bring to a boil. Then reduce to a simmer and cover.
4. Simmer for 30 minutes.
5. Remove from heat, but do not uncover.
6. Let it sit for 10-15 minutes away from the heat.
7. Fluff the rice with a fork.

According to registration of Yang County annals, black rice breeded and cultivated by the famous general marquis Zhang Qian of Han Dynasty, 140.B.C.
Cultivation of black paddy of Yang County with history more than 2000 years, from old sayings, in the Han Dynasty, Mr.Zhang Qian study at hometown ChengGu (an area of ChengGu,Yang County of ShanXi present) before attend the troops and became general.
One Day,Mr.Zhang Qian read books in a willow woods, feel tired and sleepy, so come into dreams against willow stub, in the dreams, Mr.Zhang Qian come to bullfighting palace,
have a formal visit at oracle Mr.Wen Qu Xing and want the old oracle tell him something about his future. Mr. Wen Qu Xing tell him:"Future Great!"; and then Mr.Zhang Qian ask again :"When can i sail before and on the wind of Han Dynasty?"...
The old Oracle Mr.Wen Qu Xing answer him:" Once you catch sight of black rice, that day your success." After that, Mr.Zhang Qian try hard to read books again and again, also step day and day to the river side looking for black rice.
After 3 years searching, Mr.Zhang Qian find a gray colored paddy from a bundle of wild paddy, shelled it, and find the black rice. Just this year, Mr.Zhang Qian came to be an official of Han Dynasty.
Later, Mr.Zhang Qian gift the black rice to the King Liu Che,and this emperor feel very happy and set this thing as "tribute rice",later became forbidden rice. this tradition keep till later of Manchu Colonization Period(Qing).
