Pine Nut Facts.
Pine nuts - small, edible seeds extracted from the cones of various PINE species, have been eaten worldwide as a flavorful, protein and oil-rich food. They are expensive because they are difficult to extract from the resinous cone. Unshelled pine nuts have a long storage life because of their low moisture content.
Pine nuts are the edible seeds of pine trees (family Pinaceae, genus Pinus). About 20 species of pine produce seeds large enough to be worth harvesting; in other pines the seeds are also edible, but are too small to be of value as a human food.
Height: Pine nut trees reach heights of 5-9 m with diameters of 15-80 cm, depending on the site conditions.
Nut production: Only after 18-20 years, will a pine tree start being productive. It is then productive for over 100 years. Some pine trees have been recorded that are over 400 years old.
The fruit: The seed are cylindrical in shape and can be up to 2,5 cm in length. One tree can bear about 25 cones, each producing about 100 seeds.
Harvest: The pine cones are knocked off the tree, dried in the sun and then the kernels are removed by hand.
