One-quarter cup supplies 8 grams of protein and almost 4 grams of dietary fiber. Defatted wheat germ is available, but it's lower in vitamin E (vitamin E is a fat-soluble vitamine); unlike regular wheat germ, it does not need to be stored in the refrigerator.
